U Barba offers a selection of drinks in collaboration with the cocktail bar Les Rouges in Genoa (now also present in Milan). They are all drinks based on Ligurian ingredients, including: bitters, liqueurs, bitters, GINO organic gin from Savona and D.O.P. basil soda.
Revisitations of classic cocktails such as the GE-MI-TO (Genoa Milan Turin), with Oscar 697 vermouth, Blood Bitter by Petrus BK, the award-winning Camatti amaro from Genoa and the Ligurian amaro S. Maria al Monte, or the U Gianconi, a kind of white Negroni, with GINO organic gin, Basanotto liqueur with basil and sage, Biancosarti and Asinello Corochinato, a vermouth-type aromatised white wine.
A real ‘gem’ is the Spritz Genovese (ready to drink), created with Asinello Corochinato, Vermentino Cà Lvnae and Basilichito Borea & Rossi, a must-try!
